How it is made

The vineyard
Malvasía Volcánica and Listán Blanco from a single restored vineyard, in the garden beside the Althay house in La Geria.

Harvest
Picked by hand, sorted and pressed.

Fermentation
Fermented spontaneously under controlled temperature between 17 and 19 °C, normally three to four weeks.

Malolactic
Full malolactic fermentation, normally four to six weeks. The sharper malic acid is converted into softer lactic acid.

Maturing
The wine is divided between concrete tanks and 500-litre French oak casks and matures there for about ten months. The concrete keeps the freshness and the clean mineral line; the large casks give gentle oxygen, structure and depth without pronounced oak.

Blending
The parts are brought back together, stabilised and bottled. Made without the use of fining agents. About twelve months from harvest to bottling, thirteen to fifteen to market.
