A rosé that doesn’t try to be anything other than refreshing, but gets the volcanic finish thrown in. Pale salmon, clear red berries, and a mineral pull at the end that empties the glass faster than planned.

How it is made

Grape

Listán Negro, picked by hand from the vineyards nearest the coast.

Pressing

Direct pressing, with no skin contact. It is the way the juice is drawn off that gives the pale salmon colour and the soft, almost absent tannins.

Fermentation

Temperature-controlled in stainless steel.

Maturing

It stays in steel, to keep the freshness and the red fruit. No oak.

Precision. Malvasía and Listán Negro from the plots nearest the coast, where the Atlantic sits in the wine as a mineral, almost saline undertone. The wines are paler and tauter than most, and they do something few others on the island attempt: traditional-method sparkling, with long ageing on the lees.
