Listán Rosado Brut Nature
Listán Negro with a tenth of Malvasía Volcánica, refermented in bottle and aged a year on the lees. The mousse is creamy, the colour pale salmon, and the finish mineral in the way only the island manages. The bottle that tends to be opened last at our table.

Bodegas Bermejo
Precision. Malvasía and Listán Negro from the plots nearest the coast, where the Atlantic sits in the wine as a mineral, almost saline undertone. The wines are paler and tauter than most, and they do something few others on the island attempt: traditional-method sparkling, with long ageing on the lees.
