Lías Malvasía Volcánica

Aged on its own lees, which is where the name comes from. That gives a texture that rounds the sharp volcanic acidity without removing it, and a nutty undertow beneath the apple and lime. It entered Vinmonopolet’s standard range in the summer of 2026.

Nose

Youthful apple, lime and peach, with nut, camphor, a little anise and green herbs.

Palate

Juicy, mineral and faintly saline, with apple, citrus, peach, nut, anise and green herbs.

The craft

How it is made

    Harvest

    Malvasía Volcánica is picked by hand, chilled for about a day and pressed gently.

  2. 02

    Fermentation

    Temperature-controlled in stainless steel, normally two to three weeks.

  3. 03

    On the lees

    About twelve months on the fine yeast lees. That is where the name comes from — lías is the lees.

  4. 04

    Bâtonnage

    The lees are stirred back through the wine at regular intervals across the whole period. It builds volume, a creamy texture and notes of brioche and nut.

  5. 05

    Oak

    None. The wine stays in steel throughout. The creamy character comes from time on the lees, not from wood.

  6. 06

    Time

    Bottled after about a year, then some six months in bottle. Roughly eighteen months from harvest to market.

The oldest winery in the Canary Islands and one of the ten oldest in Spain, run by the same family for generations. They have made wine without interruption since 1775 and turned 250 in 2025 — and have kept a curiosity that runs from a bone-dry Brut Nature with several years on the lees to a pale free-run rosé.
