The craft

How it is made

  1. 01

    The occasion

Made for El Grifo’s 250th anniversary, as a separate edition of the winery’s own Lías.

  2. 02

    The vineyard

Malvasía Volcánica, hand-picked in Tinajo, from vines on their own roots.

  3. 03

    Fermentation

Fermented with the winery’s own yeast strains.

  4. 04

    On the lees

More than four years on its fine lees. The winery itself points to that long, patient ageing as the source of the depth and the texture.

  5. 05

    Cask

Part of the wine is aged in cask and then blended back with the rest.

  6. 06

    Bottling

Bottled for further ageing in bottle.

What sets it apart

Made for the winery’s 250th anniversary. More than four years on the fine lees, part of it in cask, then left to mature in bottle.

El Grifo

The oldest winery in the Canary Islands and one of the ten oldest in Spain, run by the same family for generations. They have made wine without interruption since 1775 and turned 250 in 2025 — and have kept a curiosity that runs from a bone-dry Brut Nature with several years on the lees to a pale free-run rosé.
