The simplest way into the grape, and often the best. No barrel, no lees ageing — just Malvasía Volcánica as it comes out of the black sand: jasmine and apricot first, then salt and acidity. The wine we most often hand to someone who has never tasted Lanzarote.

The craft

How it is made

  1. 01

    Harvest

    Malvasía Volcánica is picked by hand at optimal ripeness and chilled for about twenty-four hours before pressing. Cooling slows oxidation and preserves the floral, fruity aromatics.

  2. 02

    Fermentation

    Gentle pressing, then temperature-controlled fermentation in stainless steel with selected local yeast strains from the winery’s own vineyards. One to two weeks.

  3. 03

    Maturing

    No oak, no long lees ageing and normally no malolactic fermentation. The wine rests in steel at around 16 °C and is deliberately left on a little of its fine lees until bottling.

  4. 04

    Bottling

    Careful stabilisation and filtration. Four to five months from harvest to bottling, and on the market some five to seven months after picking.

A short, clean road from grape to bottle. Steel only, no oak, no long maturing.

The oldest winery in the Canary Islands and one of the ten oldest in Spain, run by the same family for generations. They have made wine without interruption since 1775 and turned 250 in 2025 — and have kept a curiosity that runs from a bone-dry Brut Nature with several years on the lees to a pale free-run rosé.
