Rosado de Lágrima

Lágrima means tear, and refers to the free run: only the juice that leaves the grapes under their own weight, without pressing. The result is a pale, smooth rosé with more body than its colour suggests, and an acidity that keeps it fresh to the last sip.

The craft

How it is made

    Harvest

    Listán Negro is picked by hand and reaches the cellar quickly.

  2. 02

    Run-off

    The grapes are not pressed. The first juice is allowed to run off under its own weight — lágrima, the tear. It drains over a matter of hours.

  3. 03

    Skin contact

    Very brief. That is why the wine has little tannin and only a pale salmon colour.

  4. 04

    Fermentation

    The juice is separated from the skins and fermented under temperature control in stainless steel, one to two weeks.

  5. 05

    Maturing

    A short spell in steel to stabilise. No oak and no long ageing — the fresh red fruit is meant to stand.

  6. 06

    Time

    An estimated four to six months from harvest to market.

What sets it apart

No pressing — only the first juice, running off under its own weight. That accounts for both the pale colour and the delicate structure.

The oldest winery in the Canary Islands and one of the ten oldest in Spain, run by the same family for generations. They have made wine without interruption since 1775 and turned 250 in 2025 — and have kept a curiosity that runs from a bone-dry Brut Nature with several years on the lees to a pale free-run rosé.
